Pajzos, Chateau
Chateau Pajzos is located in the heart of the world-famous Tokaj vineyards. In fact, it is one of the few properties to be accorded “First Class” status under the 1804 Classification — a status it enjoys today. Years ago, Chateau Pajzos was bought by a French concern. It is through my French connections that I have access to these wines that taste like “liquid gold”.
The Pajzos vineyards are on a south-facing slope at an altitude of approximately 200 meters. They are planted with the traditional, noble grape varieties of the region: Furmint, Harslevelu, and some Muscat. In good years, this micro-climate gives rise to the sought-after “noble rot”, also called “Botrytis”. The affected grapes are called “Aszu Berries” and they are individually picked by hand at several times thoughout the harvest season. That’s right, they are picked single grape by single grape. This incredible care in the vineyard is coupled with fermentation in oak barrels to develop the legendary richness of the famous Aszu wine.
You know these wines are special since they are the only wines in my portfolio that are made outside of France. I only import their 5 Puttonyos Aszu wine as well as the incredible Esszencia. These are the wines of kings. And now, we can enjoy them, too. What a fantastic way to celebrate life!
